Preparation
  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  4. Beat in the egg and vanilla extract until well combined.

  7. Bake for 9-11 minutes, or until the edges are golden brown and the centers are still soft, then cool on a wire rack.

Notes

For extra chewiness, underbake slightly. You can substitute chocolate chips with other mix-ins like nuts or dried fruit.
