  • 1 cup wild rice uncooked
  • 2.5 cups chicken broth or vegetable broth
  • 2 tbsp butter
  • 1 onion chopped
  • 1 stalk celery chopped
  • 4 oz mushrooms sliced
  • salt and pepper to taste

Method
 

Preparation
  1. Rinse the wild rice under cold water, then in a large saucepan or Dutch oven, melt the butter over medium heat and sauté the chopped onion, celery, and sliced mushrooms until softened, about 5-7 minutes.
Cooking
  1. Add the rinsed wild rice and chicken broth to the saucepan; bring to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes, or until the rice is tender and the liquid is absorbed.
Finishing Touches
  1. Fluff the pilaf with a fork, season with salt and pepper to taste, and serve hot as a delicious side dish.

Notes

For extra flavor, you can add a bay leaf to the broth while cooking or a sprinkle of fresh parsley before serving.
