White Chicken Chili

  • 1 tbsp olive oil
  • 1.5 lbs chicken breasts cooked and shredded
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 2 cans cannellini beans 15 oz each, rinsed and drained
  • 4 cups chicken broth
  • 1 can green chiles 4 oz, diced
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 cup corn frozen
  • 0.5 cup heavy cream
  • 0.25 cup cilantro fresh, chopped, for garnish

Method
 

Preparation
  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Stir in shredded chicken, cannellini beans, chicken broth, diced green chiles, cumin, oregano, chili powder, salt, and black pepper. Bring to a simmer.
Cooking
  1. Reduce heat to low, cover, and simmer for 30 minutes, allowing the flavors to meld.
  2. Stir in frozen corn and heavy cream. Cook for 5 more minutes, or until the chili is heated through and slightly thickened.
Serving
  1. Ladle the chili into bowls and garnish with fresh chopped cilantro before serving. You can also add other toppings like shredded cheese, sour cream, or tortilla chips.

Notes

For extra heat, add a pinch of cayenne pepper or a diced jalapeƱo with the onions. This chili freezes well for future meals.
