  • 4 cups Watermelon diced
  • 1 Cucumber peeled, seeded, and chopped
  • 1/2 Red Bell Pepper deseeded and chopped
  • 1/4 small Red Onion finely chopped
  • 1 clove Garlic minced
  • 2 tablespoons Lime Juice
  • 1 tablespoon Red Wine Vinegar
  • 1 tablespoon Olive Oil
  • 1/4 cup Fresh Mint chopped
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
For Garnish (Optional)
  • Feta cheese crumbled
  • extra mint leaves

Method
 

Instructions
  1. Dice watermelon, chop cucumber, red bell pepper, and red onion, and mince garlic, then combine these in a blender.
  2. Add lime juice, red wine vinegar, olive oil, salt, and pepper to the blender, then blend until smooth.
  3. Taste the gazpacho and adjust seasonings as needed, adding more salt, pepper, or lime juice to your preference.
  4. Pour the gazpacho into a pitcher or serving bowl, cover, and chill in the refrigerator for at least 30 minutes, or until thoroughly cold.
  5. Garnish with crumbled feta cheese and fresh mint leaves before serving cold.

Notes

For an extra kick, add a pinch of chili flakes or a small piece of jalapeƱo to the blender.
