Ingredients
  

For the Bowl
  • 0.5 cup quinoa
  • 1 cup water
  • 1 cup shelled edamame fresh or frozen
  • 15 ounce canned chickpeas rinsed and drained
  • 1 cup cherry tomatoes halved
  • 0.5 cup cucumber diced
  • 0.25 cup red onion finely diced
  • 0.25 cup fresh parsley chopped
For the Lemon-Herb Dressing
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 0.5 teaspoon dried oregano
  • salt and black pepper to taste

Method
 

Preparation
  1. Rinse the quinoa thoroughly under cold water, then combine it with 1 cup of water in a small saucepan and bring to a boil.
  2. Reduce heat to low, cover, and simmer for 15 minutes until all the water is absorbed and the quinoa is fluffy.
Assembly
  1. While the quinoa cooks, blanch the edamame in boiling water for 3-5 minutes, then drain and cool.
  2. In a large bowl, combine the cooked quinoa, edamame, rinsed chickpeas, cherry tomatoes, diced cucumber, and red onion.
  3. In a small separate bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to create the dressing.
  4. Pour the dressing over the power bowl ingredients and toss gently to combine, then stir in the fresh parsley.
