- If not pre-cooked, microwave the potatoes on high for 3-5 minutes per potato, or until very tender.
- Carefully slice each potato in half lengthwise and scoop the flesh into a small mixing bowl, leaving a thin shell.
- Add butter, milk (or cream), 1/4 cup shredded cheese, salt, and pepper to the potato flesh; mash until creamy. Stir in chopped chives if desired.
- Spoon the creamy potato mixture back into the empty potato skins and top with a little extra shredded cheese.
- Microwave the stuffed potatoes for 1-2 minutes, or until the cheese is melted and the potatoes are heated through. Serve immediately.
Notes
For even faster preparation, use leftover baked potatoes. Adjust seasonings and cheese type to your personal preference for a customized flavor.
