  • 1 pound linguine or your preferred pasta
  • 1.5 pounds large shrimp peeled and deveined
  • 0.5 cup unsalted butter
  • 4 cloves garlic minced
  • 0.5 cup dry white wine or chicken broth
  • 0.25 cup lemon juice
  • 0.5 teaspoon red pepper flakes optional
  • 0.25 cup fresh parsley chopped
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste

Method
 

Cooking Instructions
  1. Cook the pasta according to package directions in a large pot of salted water until al dente, then drain and set aside, reserving 1 cup of pasta water.
  2. While the pasta cooks, melt butter in a large skillet over medium heat, then add garlic and red pepper flakes and cook for 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes per side until they turn pink and opaque.
  4. Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet, then bring to a simmer and cook for 2 minutes.
  5. Add the cooked pasta and reserved pasta water to the skillet, then toss everything together until the pasta is well coated in the sauce.
  6. Stir in the fresh parsley, then season with salt and pepper to taste and serve immediately.

Notes

For extra flavor, you can marinate the shrimp in a little olive oil, garlic powder, and paprika for 15 minutes before cooking. A sprinkle of grated Parmesan cheese also makes a delicious finish to this dish.
