Ingredients
  

For the Salmon
  • 2 (6 oz each) Salmon fillets
  • 1 tbsp Olive oil
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
For the Salad
  • 6 cups Romaine lettuce chopped
  • 1/4 cup Parmesan cheese shredded
  • 1/2 cup Croutons
  • 1/2 cup Caesar dressing
For Garnish (Optional)
  • Lemon wedges
  • Fresh parsley chopped

Method
 

Prepare the Salmon
  1. Preheat your oven to 400°F (200°C) or a grill pan over medium-high heat. Pat dry the salmon fillets with paper towels.
  2. Brush the salmon with olive oil and season with salt and pepper. Cook in the preheated oven for 12-15 minutes or on the grill pan for 4-5 minutes per side, until cooked through and flaky.
Prepare the Salad
  1. While the salmon cooks, wash and chop the romaine lettuce. In a large bowl, combine the chopped romaine lettuce, shredded Parmesan cheese, and croutons.
Dress the Salad
  1. Pour the Caesar dressing over the salad ingredients in the bowl. Toss gently to ensure all ingredients are evenly coated with the dressing.
Assemble the Dish
  1. Once the salmon is cooked, let it cool slightly before flaking it into bite-sized pieces. Divide the dressed salad among serving plates.
Serve
  1. Top each salad with the flaked salmon. Garnish with fresh lemon wedges and chopped parsley, if desired, and serve immediately.

Notes

For extra flavor, marinate the salmon in lemon juice and dill for 15 minutes before cooking. You can also toast your own croutons for a fresher taste.
