Salad
  • 4 ears of corn husks and silk removed
  • 3 romaine lettuce hearts chopped
  • 1.5 cups cherry tomatoes halved
  • 1 avocado diced
  • 0.5 cups shredded Parmesan cheese
Caesar Dressing
  • 0.5 cups mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 0.25 cups Parmesan cheese grated
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
Croutons (Optional)
  • 2 cups day-old bread cubed
  • 2 tablespoons olive oil
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt

Method
 

Roast the Corn
  1. Preheat your oven to 400°F (200°C) and slice the kernels off the cobs.
  2. Spread the corn kernels on a baking sheet, drizzle with olive oil, and roast for 15-20 minutes until lightly browned, tossing halfway through.
Prepare the Dressing
  1. While the corn roasts, whisk together mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, minced garlic, grated Parmesan cheese, salt, and pepper in a medium bowl.
  2. Slowly whisk in the olive oil until the dressing is smooth and emulsified.
Make Croutons (Optional)
  1. If making croutons, toss cubed bread with olive oil, garlic powder, and salt on a separate baking sheet.
  2. Bake for 8-10 minutes until golden brown and crispy, then set aside.
Assemble the Salad
  1. In a large bowl, combine chopped romaine lettuce, halved cherry tomatoes, diced avocado, and roasted corn.
  2. Pour the Caesar dressing over the salad ingredients and toss gently to ensure everything is evenly coated.
  3. Serve immediately, garnished with shredded Parmesan cheese and the optional homemade croutons.

Notes

For an extra smoky flavor, you can grill the corn instead of roasting it. You can also add grilled chicken for a more substantial meal.
