  • 2 cups diced carrots
  • 2 celery stalks, chopped
  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 cup green beans, trimmed and cut
  • 1 cup corn kernels
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

Cooking Instructions
  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add carrots, celery, and onion to the pot and sauté until softened, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Pour in the vegetable broth and diced tomatoes. Add the diced potatoes, green beans, corn, basil, oregano, salt, and pepper. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until the potatoes are tender.
  4. Taste and adjust seasonings as needed. Serve hot and enjoy!

Notes

For extra flavor, add a bay leaf during simmering and remove before serving. You can also customize by adding your favorite vegetables like zucchini or spinach. Serve with a crusty bread for a complete meal.
