Ingredients
  

Crust
  • 1 sheet Puff Pastry thawed
Filling
  • 3 medium Heirloom Tomatoes sliced
  • 4 oz Goat Cheese crumbled
  • 1 tbsp Fresh Thyme chopped
  • 2 tbsp Olive Oil
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Carefully unroll the thawed puff pastry sheet onto the prepared baking sheet.
Assembly
  1. Arrange the sliced heirloom tomatoes on top of the puff pastry, leaving a 1-inch border around the edges.
  2. Sprinkle the crumbled goat cheese and fresh thyme evenly over the tomatoes.
  3. Drizzle with olive oil and season with salt and black pepper.
Baking
  1. Bake for 25-30 minutes, or until the pastry is golden brown and puffed, and the tomatoes are slightly softened.
  2. Allow the tart to cool for a few minutes before slicing and serving.

Notes

For an extra touch of flavor, you can brush the edges of the puff pastry with an egg wash before baking. You can also experiment with different cheeses, such as feta or Gruyère, for variations on this tart.
