Preparation
- Preheat oven to 350°F (175°C) and grease and flour two 8-inch round cake pans. In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Add softened butter, eggs, milk, and vanilla extract to the dry ingredients and beat with an electric mixer until smooth.
- Gently fold in the diced fresh strawberries into the cake batter.
- Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake layers cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
Cream Cheese Frosting
- In a medium bowl, beat softened cream cheese and butter with an electric mixer until light and fluffy.
- Gradually add powdered sugar, one cup at a time, beating until smooth after each addition, then stir in vanilla extract and strawberry puree.
- Once the cake layers are completely cool, frost and decorate as desired with fresh strawberries.
Notes
Use fresh, ripe strawberries for the best flavor. Do not overmix the batter to ensure a tender cake. For an extra touch, garnish with fresh mint leaves or a dusting of powdered sugar. Make sure your cream cheese and butter are at room temperature for a smooth frosting. If the cake browns too quickly, cover it loosely with foil. Taste the frosting and adjust sweetness as desired. Store leftover cake in an airtight container in the refrigerator for up to 3 days.
