  • 1 can black beans, rinsed and drained 15-ounce
  • 1 cup corn kernels, fresh or frozen
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, finely diced
  • 1 avocado, diced
For the Dressing
  • 3 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp honey or maple syrup
  • 0.5 tsp cumin
  • 0.5 tsp chili powder
  • 0.25 tsp garlic powder
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Salad Preparation
  1. In a large bowl, combine the shredded chicken, chopped romaine lettuce, black beans, corn, cherry tomatoes, and red onion.
