  • 1.5 cups granulated sugar
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 0.5 cup vegetable oil
  • 2 tablespoons red food coloring
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
Cream Cheese Frosting
  • 8 ounces cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 3 cups confectioners' sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. In a large bowl, whisk together eggs, buttermilk, oil, food coloring, vinegar, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and smooth.
  5. Divide the batter evenly between the prepared cake pans.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  2. Cool the cakes in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Cream Cheese Frosting
  1. In a large bowl, beat cream cheese and butter until light and fluffy.
  2. Gradually add confectioners' sugar, beating until smooth.
  3. Stir in vanilla extract until well combined.
Assembly
  1. Once the cakes are completely cool, spread a layer of frosting on top of one cake layer.
  2. Place the second cake layer on top and cover the entire cake with the remaining frosting.
  3. Decorate as desired and serve.

Notes

For best results, make sure your cream cheese and butter are at room temperature for the frosting. Do not overmix the cake batter to keep it tender and moist. A sprinkle of cocoa powder or red velvet crumbs can be used for garnish.
