  • 1 cup Quinoa
  • 2 cups Water
  • 1 Cucumber diced
  • 1 cup Cherry Tomatoes halved
  • 0.5 Red Onion finely chopped
  • 0.5 cup Feta Cheese crumbled
Dressing
  • 3 tbsp Olive Oil
  • 2 tbsp Lemon Juice
  • 1 tsp Dijon Mustard
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Method
 

Preparation
  1. Rinse the quinoa thoroughly under cold water, then combine it with two cups of water in a saucepan and bring to a boil.
  2. Reduce heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed and the quinoa is fluffy; then let it cool.
  3. In a large bowl, combine the cooked and cooled quinoa with diced cucumber, halved cherry tomatoes, finely chopped red onion, and crumbled feta cheese.
Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper until well combined.
Assembly
  1. Pour the dressing over the quinoa and vegetable mixture, then toss gently to ensure everything is evenly coated.
  2. Serve immediately, or chill in the refrigerator for at least 30 minutes for enhanced flavor.
