  • 2 cups Cauliflower Rice
  • 2 Eggs
  • 2 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1 cup Mixed Vegetables
  • 2 cloves Garlic
  • 1 tsp Ginger grated
  • 2 Green Onions chopped
Optional Garnish
  • Sriracha to taste

Method
 

Preparation
  1. Heat a large skillet or wok over medium-high heat. Add a tablespoon of cooking oil.
  2. Add the garlic and ginger, and stir-fry for 30 seconds until fragrant.
Cooking
  1. Add the mixed vegetables and stir-fry for 3-5 minutes until tender-crisp.
  2. Push the vegetables to one side, crack the eggs into the empty space, and scramble until cooked through.
  3. Add the cauliflower rice to the skillet, along with the soy sauce and sesame oil. Stir-fry for 5-7 minutes, breaking up any clumps of cauliflower rice, until heated through and slightly browned.
Serving
  1. Stir in the chopped green onions. Serve immediately, garnished with Sriracha if desired.
