Preparation
- Preheat your oven to 350°F (175°C) and lightly grease a baking sheet or a 9x5 inch loaf pan.
- In a large bowl, combine the lean ground beef, egg, milk, bread crumbs, chopped yellow onion, 1/4 cup ketchup, 1 tablespoon Worcestershire sauce, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Mix the ingredients gently until just combined, being careful not to overmix, as this can make the meatloaf tough.
Forming and Baking
- Shape the meat mixture into a loaf on the prepared baking sheet or press it evenly into the loaf pan.
- In a small bowl, whisk together the glaze ingredients: 1/2 cup ketchup, brown sugar, Dijon mustard, 1 teaspoon Worcestershire sauce, and 1/2 teaspoon garlic powder.
- Spread about half of the glaze evenly over the top of the meatloaf.
- Bake for 45 minutes, then remove from the oven, spread the remaining glaze over the meatloaf, and return to the oven.
- Continue baking for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
Resting and Serving
- Once baked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving. This allows the juices to redistribute for a more tender meatloaf.
Notes
For extra flavor, consider adding a dash of smoked paprika or a pinch of red pepper flakes to the meatloaf mixture. If you don't have bread crumbs, crushed crackers or rolled oats can be used as a substitute. Serving with mashed potatoes and green beans completes this classic comfort meal.
