Preparation
- Pound chicken breasts to an even thickness of about 1/2 inch, then season with salt and pepper.
- Dredge the chicken in flour, shaking off any excess.
Cooking
- Heat olive oil and butter in a large skillet over medium-high heat, then brown the chicken for 3-4 minutes per side until golden.
- Remove the chicken and set aside, then add mushrooms to the skillet and sauté for 5-7 minutes.
- Stir in garlic and cook for 1 minute more until fragrant, then pour in Marsala wine and chicken broth, scraping up any browned bits.
- Return the chicken to the skillet, bring the sauce to a simmer, and cook for 5-7 minutes until the chicken is cooked through and the sauce thickens slightly.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, use a dry Marsala wine. You can also add a splash of heavy cream to the sauce at the end for a richer texture.
