Making the Patties
- Mash the black beans in a large bowl, leaving some whole for texture.
- Add the cooked brown rice, bread crumbs, egg, chopped onion, minced garlic, chili powder, cumin, salt, and pepper to the mashed beans.
- Mix all ingredients thoroughly until well combined. Form the mixture into four equal patties.
- Heat olive oil in a large skillet over medium heat.
Cooking the Burgers
- Cook the patties for 5-7 minutes on each side, or until golden brown and heated through.
- Lightly toast the burger buns during the last few minutes of cooking.
Assemble and Serve
- Place a cooked veggie patty on each toasted bun.
- Top with lettuce, tomato, onion, pickles, and your favorite condiments. Serve immediately.
Notes
For extra flavor, you can add a dash of smoked paprika or a splash of Worcestershire sauce to the patty mixture. If the mixture is too wet, add more bread crumbs; if it's too dry, add a tablespoon of water or vegetable broth. These burgers can be made ahead of time and refrigerated for up to 3 days, or frozen for up to 1 month. Reheat in a skillet or oven until warmed through.
