Preparation
- In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, chili powder, and cumin, cooking for another minute until fragrant.
- Pour in the chicken broth, diced tomatoes, black beans, corn, shredded chicken, salt, and pepper.
- Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes to allow the flavors to meld.
Serving
- Ladle the hot soup into bowls.
- Serve with your favorite toppings such as crushed tortilla chips, shredded cheese, diced avocado, a dollop of sour cream, and a squeeze of fresh lime juice.
Notes
For extra heat, add a pinch of cayenne pepper or a chopped jalapeƱo to the soup. You can also use rotisserie chicken for an even quicker prep time.
