Ingredients

Main Ingredients
  • 1 cup canned pumpkin
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 3 eggs
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
Cream Cheese Filling
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 4 tbsp butter, softened
  • 1 tsp vanilla extract

Equipment

  • oven
  • 10x15 inch jelly roll pan
  • parchment paper
  • large bowl
  • whisk
  • separate bowl
  • sifter
  • kitchen towel
  • electric mixer

Method

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 10x15 inch jelly roll pan, then line it with parchment paper and grease the paper.
  2. In a large bowl, whisk together the canned pumpkin, eggs, and granulated sugar until well combined and smooth.
  3. In a separate bowl, sift together the all-purpose flour, baking soda, cinnamon, and nutmeg to ensure even distribution.
Baking
  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a smooth batter forms.
  2. Pour the batter evenly into the prepared jelly roll pan and bake for 13-15 minutes, or until a toothpick inserted into the center comes out clean.
Assembly
  1. While the cake is still warm, carefully roll it up in a powdered sugar-dusted kitchen towel, starting from the short side, and let it cool completely.
Cream Cheese Filling
  1. For the filling, beat softened cream cheese, powdered sugar, softened butter, and vanilla extract together until light and fluffy.
Finishing
  1. Unroll the cooled pumpkin cake, spread the cream cheese filling evenly over it, and then re-roll it tightly.
  2. Chill the pumpkin roll for at least 1 hour before slicing and serving to allow the filling to set.

Notes

Ensure the cake is still warm when you roll it in the towel to prevent cracking. Chilling the pumpkin roll thoroughly before slicing will make it easier to cut clean slices and enhance the flavor of the filling.
