  • 1/2 teaspoon Salt

  • 6 Fresh sage leaves

Preparation
  1. Boil potatoes in their skins until tender, then peel and mash them while still hot until smooth.
  2. On a clean surface, combine the mashed potatoes with flour, egg, and salt, mixing gently until a dough forms.
Forming Gnocchi
  1. Divide the dough into quarters and roll each into a long rope, then cut into 1-inch pieces.
  2. Gently roll each piece over a fork or gnocchi board to create ridges, or leave them smooth.
Cooking Gnocchi
  1. Bring a large pot of salted water to a gentle boil, then add gnocchi in batches.
  2. Cook for 2-3 minutes or until they float to the surface, then remove with a slotted spoon.
  3. Serve immediately with your favorite sauce, or pan-fry in butter and sage for a crispy finish.

Notes

Avoid overworking the dough to keep the gnocchi tender. For best results, use starchy potatoes like Russet or Yukon Gold.
