Preparation
- Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners or spray with non-stick spray.
- In a large bowl, whisk together the flour, sugar, baking powder, pumpkin pie spice, and salt until well combined.
Mixing and Baking
- In a separate medium bowl, whisk together the pumpkin puree, milk, egg, and vegetable oil until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined, being careful not to overmix.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Cooling
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra flavor, sprinkle a streusel topping or chocolate chips on top of the batter before baking. These muffins are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
