Preparation
- Line an 8x8 inch baking dish with parchment paper, leaving an overhang on the sides for easy removal.
- Crush the graham crackers into fine crumbs and mix with melted butter; press this mixture firmly into the prepared dish to form the crust.
Peanut Butter Layer
- In a medium bowl, combine peanut butter, powdered sugar, and softened butter. Beat until smooth and creamy.
- Spread the peanut butter mixture evenly over the graham cracker crust using a spatula.
Chocolate Topping
- Melt chocolate chips and coconut oil together in a microwave-safe bowl, stirring until smooth.
- Pour the melted chocolate over the peanut butter layer and spread it evenly.
- Refrigerate the bars for at least 1-2 hours, or until the chocolate is firm.
Serving
- Once firm, lift the bars out of the dish using the parchment paper overhang and cut into squares.
- Store the no-bake peanut butter bars in an airtight container in the refrigerator.
Notes
For an extra touch, sprinkle a pinch of sea salt on top of the chocolate layer before it sets. You can also use other types of crushed cookies for the crust, such as Oreos or shortbread, for a different flavor profile.
