  • 2 tbsp Lemon juice
  • 3 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Preparation
  1. Cook quinoa according to package directions, then fluff it with a fork and let it cool.
  2. Rinse and drain canned chickpeas, then prepare all vegetables by halving cherry tomatoes, dicing cucumber, and dicing avocado.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper to create the dressing.
Assembly
  1. In a large bowl, combine the cooled quinoa, rinsed chickpeas, mixed greens, cherry tomatoes, diced cucumber, and diced avocado.
  2. Pour the prepared dressing over the salad ingredients and toss gently to ensure everything is evenly coated.
  3. If desired, sprinkle with toasted nuts or seeds and fresh chopped herbs for extra flavor and texture before serving.

Notes
