Preparation
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
Baking
- Roll out the dough on a lightly floured surface to about 1/4-inch thickness, then use Halloween-themed cookie cutters to cut out shapes.
- Place the cut-out cookies on the prepared baking sheets and bake for 8-10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Decorating (Optional)
- To make royal icing, combine powdered sugar, meringue powder, and water in a bowl; beat until stiff peaks form.
- Divide the icing into separate bowls and mix in different Halloween-themed food colorings.
- Once the cookies are completely cool, decorate them with the colored royal icing and allow the icing to set before serving or storing.
Notes
For extra flavor, add a pinch of nutmeg or lemon zest to the cookie dough. If you don't have meringue powder for the royal icing, you can use a simple glaze made with powdered sugar and milk/lemon juice, though it won't harden as much. Get creative with your decorations using sprinkles, edible glitter, or other Halloween candies!
