  • 2 cups Chicken or turkey broth

  1. Separate the fat from the turkey drippings using a fat separator or by chilling and skimming, then measure 2 cups of the defatted drippings into a saucepan.
  2. Whisk in 1/4 cup of all-purpose flour until a smooth paste forms, cooking for 1-2 minutes to eliminate any raw flour taste.
  3. Gradually whisk in 2 cups of chicken or turkey broth, bring the mixture to a simmer, and cook until the gravy thickens to your desired consistency, then season with salt and pepper to taste.

Notes

For extra flavor, you can add a sprig of fresh thyme or a bay leaf to the gravy while it simmers. If the gravy is too thick, add a little more broth; if it's too thin, simmer longer to reduce. You can also make this gravy ahead of time and reheat gently, adding more broth as needed to reach the desired consistency.
