For the Peaches
  • 6 cups peaches, fresh or frozen
  • 0.5 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
For the Topping
  • 1.5 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, cold and cubed
  • 0.5 cup milk
For Serving
  • vanilla ice cream or whipped cream optional

Method
 

Prepare the Peaches
  1. Preheat your oven to 375°F (190°C). In a large bowl, combine the peaches, 1/2 cup granulated sugar, cornstarch, lemon juice, and vanilla extract; mix well.
Prepare the Topping
  1. In a separate medium bowl, whisk together the flour, 3/4 cup granulated sugar, baking powder, and salt. Cut in the cold, cubed butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the milk until just combined.
Assemble and Bake
  1. Pour the peach mixture into a 9x13 inch baking dish. Drop spoonfuls of the topping mixture evenly over the peaches. Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
Serve
  1. Let the cobbler cool slightly before serving. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

For extra flavor, you can add a pinch of nutmeg or cinnamon to the peach mixture. If using frozen peaches, do not thaw them before mixing; simply add them directly to the bowl with the other peach ingredients.
