Prepare the Peaches
- Preheat your oven to 375°F (190°C). In a large bowl, combine the peaches, 1/2 cup granulated sugar, cornstarch, lemon juice, and vanilla extract; mix well.
Prepare the Topping
- In a separate medium bowl, whisk together the flour, 3/4 cup granulated sugar, baking powder, and salt. Cut in the cold, cubed butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the milk until just combined.
Assemble and Bake
- Pour the peach mixture into a 9x13 inch baking dish. Drop spoonfuls of the topping mixture evenly over the peaches. Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
Serve
- Let the cobbler cool slightly before serving. Serve warm, optionally with vanilla ice cream or whipped cream.
Notes
For extra flavor, you can add a pinch of nutmeg or cinnamon to the peach mixture. If using frozen peaches, do not thaw them before mixing; simply add them directly to the bowl with the other peach ingredients.
