  • 1 cup cooked chicken diced
  • 2 cups cooked rice preferably day-old
  • 2 eggs beaten
  • 1 cup mixed vegetables frozen, thawed
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 2 green onions chopped

Method
 

Cooking Steps
  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and grated ginger, then stir-fry for 30 seconds until fragrant.
  3. Push garlic and ginger to one side, then pour beaten eggs into the other side and scramble until cooked through.
  4. Add diced cooked chicken and mixed vegetables to the skillet, then stir-fry for 2-3 minutes.
  5. Add cooked rice to the skillet, breaking up any clumps, and stir-fry for 3-5 minutes until heated through.
  6. Pour soy sauce and sesame oil over the rice, then stir well to combine all ingredients.
  7. Stir in chopped green onions and serve immediately.

Notes

For best results, use day-old rice as it tends to be drier and less sticky. You can also customize the vegetables to your liking.
