  • 1 cup Corn, frozen or canned (drained)
  • 1/2 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Optional Toppings
  • Cheddar cheese, shredded for serving
  • Sour cream or Greek yogurt for serving
  • Fresh cilantro, chopped for serving
  • Tortilla chips or strips for serving

Preparation
  1. In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat.

Cooking the Soup
