Preparation
- Combine beef cubes, grated onion, minced garlic, olive oil, lemon juice, paprika, cumin, coriander, cayenne pepper (if using), salt, and black pepper in a large bowl.
- Mix thoroughly to ensure all beef pieces are well coated.
- Cover the bowl and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for richer flavor.
Cooking
- Preheat your grill to medium-high heat (375-400°F / 190-200°C). If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread the marinated beef cubes onto skewers, ensuring not to overcrowd them.
- Grill the kebabs for 2-3 minutes per side, turning occasionally, until they are nicely browned and cooked to your desired doneness.
- Remove from grill and let rest for a few minutes before serving.
Notes
For extra flavor, add a pinch of sumac or a sprinkle of fresh parsley when serving. These kebabs are delicious served with rice, pita bread, or a fresh salad. If you don't have a grill, you can cook these in a hot cast-iron skillet or under the broiler.
