Ingredients
  

For Sprouting Chickpeas
  • 1 cup Dried chickpeas
  • 3 cups Water
For Chickpea Salad
  • 1 cup Sprouted chickpeas
  • 2 tablespoons Mayonnaise
  • 1/4 cup Celery, finely diced
  • 2 tablespoons Red onion, finely diced
  • 1 tablespoon Fresh dill, chopped
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

  • Thin cloth or sprouting jar
  • Fork or potato masher
  • Medium bowl

Method
 

Sprouting Chickpeas
  1. Rinse 1 cup of dried chickpeas thoroughly under cold water, then place them in a large bowl and cover with 3 cups of water.
  2. Let the chickpeas soak overnight for 8-12 hours, then drain and rinse them well under cold water.
  3. Transfer the rinsed chickpeas to a colander or sprouting jar, cover with a thin cloth, and leave at room temperature, rinsing them every 8-12 hours for 2-3 days until small sprouts appear.
Making Chickpea Salad
  1. Once sprouted, gently rinse the chickpeas again and pat them dry with a clean towel.
  2. In a medium bowl, slightly mash the sprouted chickpeas with a fork or potato masher, leaving some whole for texture.
  3. Add mayonnaise, diced celery, diced red onion, fresh dill, Dijon mustard, and lemon juice to the mashed chickpeas.
  4. Season with salt and black pepper, then mix everything until well combined.
  5. Serve the chickpea salad immediately on bread, crackers, or lettuce wraps, or refrigerate for later enjoyment.

Notes

Sprouting chickpeas enhances their nutritional value and makes them easier to digest. You can adjust the amount of mayonnaise and seasonings to your taste. This salad is also great with added ingredients like chopped bell peppers, cucumbers, or a pinch of curry powder.
