  • 2 lbs chicken breast boneless, skinless
  • 6 cups chicken broth
  • 2 cups carrots chopped
  • 1 cup celery chopped
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1.5 cups potatoes diced
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste

Method
 

Preparation
  1. Place chicken breasts at the bottom of your slow cooker.
  2. Add carrots, celery, onion, garlic, and potatoes over the chicken.
  3. Pour chicken broth into the slow cooker, ensuring all ingredients are submerged.
Cooking
  1. Stir in dried thyme, bay leaf, salt, and black pepper.
  2. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through and vegetables are tender.
  3. Remove chicken from slow cooker, shred it using two forks, then return shredded chicken to the soup and stir.
Serving
  1. Discard the bay leaf before serving.
  2. Ladle the soup into bowls and serve hot.

Notes

For extra flavor, you can sauté the vegetables briefly before adding them to the slow cooker. This soup freezes well for future meals.
