  • 1 cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the pumpkin puree, egg, and vanilla extract until well combined.
Baking
  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  2. Drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  3. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  4. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For an extra touch, you can add a cream cheese frosting once the cookies have cooled completely.
