  • 0.25 cups vegetable oil
  • 1 cup fresh blueberries

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a 7-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk the egg, milk, and vegetable oil until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
  5. Gently fold in the fresh blueberries.
  6. Divide the batter evenly among the 7 muffin cups.
Baking
  1. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
Cooling
  1. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes
