- Prepare the rice by ensuring it is cold; leftover rice works best. Whisk the eggs in a small bowl and set aside.
- Mix soy sauce, oyster sauce, and sesame oil in a separate small bowl for the sauce.
Cooking
- Heat vegetable oil in a large wok or skillet over medium-high heat. Add shrimp and cook until pink, then remove and set aside.
- Add eggs to the wok and scramble until cooked through, then remove and set aside.
- Add a bit more oil if needed, then sauté garlic and ginger until fragrant.
- Add frozen peas and carrots, cooking until tender-crisp.
- Stir in the cold rice, breaking up any clumps.
- Pour in the sauce mixture, tossing to combine everything evenly.
- Return the cooked shrimp and scrambled eggs to the wok, mixing well.
- Season with white pepper, salt, and sugar, and add chicken broth for extra flavor.
Finishing
- Garnish with chopped green onions before serving.
Notes
For best results, use day-old rice as it tends to be drier and fries better. Adjust the amount of soy sauce to your preference, especially if you are sensitive to sodium.
