Prepare the Pie Crust
- In a large bowl, combine the flour and salt, then cut in the cold, cubed butter using a pastry blender or your fingers until crumbly.
- Gradually add ice water, mixing until a dough forms; divide the dough in half, flatten into discs, wrap, and chill for 30 minutes.
Prepare the Apple Filling
- Peel, core, and slice the apples, then place them in a large bowl.
- Add granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice to the apples and toss to coat evenly.
Assemble the Pie
- Preheat oven to 400°F (200°C) and roll out one dough disc to fit a 9-inch pie plate.
- Pour the apple filling into the crust.
- Roll out the second dough disc and place it over the filling, then trim and crimp the edges to seal.
- Cut several slits in the top crust for ventilation, brush with beaten egg, and sprinkle with sugar.
Bake the Pie
- Bake for 15 minutes, then reduce oven temperature to 375°F (190°C) and continue baking for 30-35 minutes until the crust is golden brown and the filling is bubbly.
- Let the pie cool completely on a wire rack before serving.
Notes
For extra flavor, consider adding a pinch of ground cloves or ginger to the apple filling. If the crust starts to brown too quickly, loosely tent the pie with aluminum foil. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
