  • 4 corn on the cob

  • 1 avocado diced

Side Dish 3: Watermelon & Feta Salad
  • 4 cups watermelon cubed
  • 0.5 cup feta cheese crumbled
  • 0.25 cup fresh mint chopped
  • 2 tbsp balsamic glaze

Method
 

Quinoa Salad
  1. Cook quinoa according to package directions, then let it cool.
  2. Combine cooked quinoa with cucumber, cherry tomatoes, and fresh parsley.
  3. Dress with lemon juice, salt, and pepper to taste, then mix well.
Grilled Corn Salad
  1. Grill corn on the cob until slightly charred, then cut kernels off.
  2. Mix corn kernels with red onion, avocado, and chopped cilantro.
  3. Drizzle with lime juice, season with salt and pepper, and toss gently.
Watermelon & Feta Salad
  1. Gently combine cubed watermelon, crumbled feta cheese, and chopped mint.

Notes

For best results, prepare these salads fresh. The quinoa and corn salads can be made a few hours ahead, but add avocado to the corn salad right before serving to prevent browning. The watermelon salad is best served immediately.
