Caramelizing Onions
- Slice the onions thinly and melt butter in a large pot or Dutch oven over medium heat.
- Add the sliced onions to the pot and cook slowly, stirring occasionally, until they turn deeply golden brown and caramelized, about 30-40 minutes.
Deglazing and Simmering
- Pour in the dry white wine to deglaze the pot, scraping up any browned bits from the bottom.
- Add the beef broth, bring to a simmer, and cook for at least 15 minutes to allow the flavors to meld.
Serving
- Ladle the soup into oven-safe bowls and top each with a slice of baguette.
- Sprinkle a generous amount of Gruyere cheese over the baguette and broil until the cheese is melted and bubbly.
Notes
For richer flavor, use homemade beef broth. You can also experiment with other cheeses like Emmental or Comté.
