Dinner 3: Quick Quesadillas
  • 4 flour tortillas
  • 200 g shredded cheese
  • 1 cup cooked chicken (optional) shredded

Method
 

Dinner 1: Pasta with Cherry Tomatoes and Mozzarella
  1. Boil the pasta according to package directions until al dente, then drain it well.
  2. While the pasta cooks, halve the cherry tomatoes and slice the mozzarella balls.
  3. Combine the hot pasta with cherry tomatoes and mozzarella, allowing the cheese to melt slightly.
  4. Season with salt and pepper, then garnish with fresh basil before serving.
Dinner 2: Chicken and Veggie Stir-fry
  1. Heat a large pan or wok with a little olive oil over medium-high heat.
  2. Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the frozen mixed vegetables and cook for another 5-7 minutes until tender-crisp.
  4. Pour in the soy sauce, toss to combine, and serve immediately.
Dinner 3: Quick Quesadillas
  1. Heat a dry skillet or griddle over medium heat.
  2. Place a tortilla in the skillet, sprinkle half with cheese and optional cooked chicken, then fold the other half over.
