  • 1.5 lbs boneless, skinless chicken thighs

  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tbsp brown sugar
  • 2 tbsp coconut milk
For the Peanut Sauce
  • 0.5 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp brown sugar
  • 0.5 tsp fresh ginger, grated
  • 1 clove garlic, minced
  • 1 tsp sriracha or chili garlic sauce adjust to taste
  • 0.25 cup coconut milk
  • 2 tbsp water or more, to reach desired consistency

Method
 

Chicken Satay Instructions
  1. Cut chicken into thin strips and soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. Combine soy sauce, lime juice, ginger, garlic, turmeric, coriander, cumin, brown sugar, and coconut milk in a bowl to create the marinade.
  3. Add chicken strips to the marinade, ensuring they are well coated, then cover and refrigerate for at least 30 minutes, or preferably 2-4 hours.
  4. Thread the marinated chicken onto the soaked skewers and preheat your grill or broiler to medium-high heat.
  5. Grill or broil the chicken satay for 2-3 minutes per side, turning occasionally, until the chicken is cooked through and lightly charred.
Peanut Sauce Instructions
  1. In a small saucepan over medium heat, whisk together peanut butter, soy sauce, lime juice, brown sugar, ginger, garlic, sriracha, coconut milk, and water.
  2. Bring the mixture to a gentle simmer, then reduce heat and continue to cook for 3-5 minutes, stirring frequently, until the sauce thickens and is smooth.
  3. Adjust seasoning if necessary and add more water if a thinner consistency is desired.
Serving
  1. Serve the hot chicken satay skewers immediately with the warm peanut sauce for dipping.

Notes
