Preparation
- Chop the tomatoes, onion, and garlic. Roughly chop the fresh basil, setting some aside for garnish.
Cooking
- Heat olive oil in a large pot over medium heat. Sauté the chopped onion until translucent, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Stir in the chopped tomatoes, vegetable broth, and half of the basil. Bring to a simmer, then reduce heat and cook for 30 minutes, allowing flavors to meld.
- Carefully blend the soup until smooth using an immersion blender or by transferring it in batches to a regular blender. Return to the pot if using a regular blender.
- Stir in the remaining fresh basil and season with salt and pepper to taste. Heat through for an additional 5 minutes.
Serving
- Ladle the hot soup into bowls. Garnish with extra fresh basil or a drizzle of olive oil, if desired. Serve immediately.
Notes
For a richer flavor, consider roasting the tomatoes and garlic before adding them to the soup. You can also add a splash of cream or coconut milk at the end for a creamier texture. This soup freezes well for future enjoyment.
