  • 1 cup Fresh Basil
  • 1 medium Onion
  • 3 cloves Garlic
  • 4 cups Vegetable Broth
  • 2 tbsp Olive Oil

Preparation
  1. Chop the tomatoes, onion, and garlic. Roughly chop the fresh basil, setting some aside for garnish.
Cooking
  1. Heat olive oil in a large pot over medium heat. Sauté the chopped onion until translucent, about 5 minutes.
  2. Add garlic and cook for another minute until fragrant.
  3. Stir in the chopped tomatoes, vegetable broth, and half of the basil. Bring to a simmer, then reduce heat and cook for 30 minutes, allowing flavors to meld.
  4. Carefully blend the soup until smooth using an immersion blender or by transferring it in batches to a regular blender. Return to the pot if using a regular blender.
  5. Stir in the remaining fresh basil and season with salt and pepper to taste. Heat through for an additional 5 minutes.
Serving
  1. Ladle the hot soup into bowls. Garnish with extra fresh basil or a drizzle of olive oil, if desired. Serve immediately.

Notes
