  • 2 cans great northern beans rinsed and drained
  • 4 cups chicken broth
  • 1 can diced green chilies
  • 1 medium onions chopped
  • 2 cloves garlic cloves minced
  • 1 tbsp olive oil
Spices and Seasonings
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • 0.5 tsp cayenne pepper adjust to taste
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Sauté chopped onions until softened, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in cumin, oregano, chili powder, cayenne pepper, salt, and black pepper. Cook for 1 minute, allowing the spices to bloom.
Cooking the Chili
  1. Add chicken broth, great northern beans, diced green chilies, and cooked chicken to the pot. Bring to a simmer.
  2. Reduce heat to low, cover, and let it simmer for at least 30 minutes, or up to an hour, to allow flavors to meld.
  3. Taste and adjust seasonings as needed. If you prefer a thicker chili, you can mash some of the beans against the side of the pot.
Serving
  1. Ladle the hot white chicken chili into bowls. Serve with your favorite toppings like sour cream, shredded cheese, fresh cilantro, or sliced jalapeños.

Notes

For extra depth of flavor, consider roasting your chicken or using leftover rotisserie chicken. You can also add a splash of lime juice or a dollop of Greek yogurt for a tangy finish. Adjust the amount of cayenne pepper to your preferred spice level.
