  • 1.5 lb chicken breast
  • 8 oz pasta
  • 1 pint cherry tomatoes
  • 5 oz fresh spinach
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 0.5 cup Parmesan cheese grated
Seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp dried oregano

Method
 

Preparation
  1. Cook pasta according to package directions until al dente; drain and set aside.
  2. While pasta cooks, slice chicken breast into 1-inch pieces and mince the garlic.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat, then add chicken and cook until browned and cooked through, about 5-7 minutes.
  2. Add minced garlic, cherry tomatoes, salt, pepper, and oregano to the skillet, cooking for 3-4 minutes until tomatoes soften slightly.
  3. Stir in fresh spinach and cooked pasta, tossing until spinach wilts, which takes about 1-2 minutes.
Serving
  1. Remove from heat and stir in grated Parmesan cheese, serving immediately.

Notes

For extra flavor, add a pinch of red pepper flakes with the garlic. You can substitute chicken with shrimp or your favorite plant-based protein.
