  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 lemon halved

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F). Remove the chicken from its packaging, pat it dry with paper towels, and place it in a roasting pan.
  2. In a small bowl, mix olive oil, salt, black pepper, garlic powder, and paprika to create a seasoning rub. Rub the mixture all over the chicken, ensuring it's evenly coated.
  3. Place the halved lemon inside the chicken cavity. This will add moisture and flavor during cooking.
Roasting
  1. Roast the chicken for 1 hour and 30 minutes, or until the internal temperature reaches 74°C (165°F) in the thickest part of the thigh.
  2. Halfway through cooking, you can baste the chicken with its own juices to keep it moist and promote even browning.
Resting and Serving
  1. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken.
  2. Carve the chicken and serve immediately with your favorite side dishes.

Notes

For extra crispy skin, you can lightly coat the chicken with baking powder before applying the seasoning rub. Feel free to experiment with different herbs like rosemary or thyme for added flavor.
