Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- Boil the sweet potatoes in a large pot of lightly salted water until tender, about 15-20 minutes, then drain and let them cool slightly.
Making the Casserole
- Peel the cooled sweet potatoes and mash them in a large bowl until smooth.
- Stir in granulated sugar, milk, melted butter, beaten eggs, vanilla extract, and salt into the mashed sweet potatoes.
- Pour the sweet potato mixture into the prepared baking dish and spread evenly.
Preparing the Topping
- In a medium bowl, combine flour, brown sugar, chopped pecans, and melted butter.
- Mix until crumbly and then sprinkle the topping evenly over the sweet potato mixture.
Baking
- Bake for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.
- Let the casserole cool for a few minutes before serving.
Notes
For extra flavor, add a pinch of nutmeg or cinnamon to the sweet potato mixture. You can also toast the pecans before adding them to the topping for a deeper nutty flavor.
