Ingredients
  

Salad
  • 500 g new potatoes
  • 200 g fine green beans
  • 4 eggs
  • 250 g cherry tomatoes halved
  • 0.5 cucumber sliced
  • 50 g black olives
  • 185 g canned tuna in olive oil drained and flaked
  • 6 anchovy fillets optional
Dressing
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 garlic clove minced
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

Preparation
  1. Boil the new potatoes in salted water for 10-15 minutes until tender, then drain and cut them in half.
  2. Steam or blanch the green beans for 3-5 minutes until crisp-tender, then immediately transfer to ice water to stop cooking and retain their vibrant color.
  3. Hard-boil the eggs for 8-10 minutes, then cool them in ice water, peel, and cut into quarters.
  4. In a large bowl, combine the halved cherry tomatoes, sliced cucumber, black olives, flaked tuna, and optional anchovy fillets.
  5. Whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to create the dressing.
Assembly
  1. Add the cooked potatoes, green beans, and quartered eggs to the bowl with the other salad ingredients.
  2. Pour the dressing over the salad and gently toss to ensure all ingredients are well coated.
  3. Serve the Nicoise salad immediately as a refreshing main course or side dish.

Notes

For an extra touch of flavor, fresh basil or parsley can be added to the salad. You can also adjust the amount of anchovies or olives to your preference.
