  • 2 cups pasta cooked and cooled
  • 1 cup cherry tomatoes halved
  • 0.5 cup cucumber diced
  • 0.5 cup bell pepper diced
  • 0.5 cup cheddar cheese cubed
Dressing
  • 0.25 cup mayonnaise
  • 2 tbsp plain yogurt
  • 1 tsp dijon mustard
  • 1 tsp honey
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Method
 

Prepare Pasta and Vegetables
  1. Cook pasta according to package directions, then drain and rinse with cold water until completely cooled. Halve the cherry tomatoes, dice the cucumber, and dice the bell pepper.
  2. In a large bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, diced bell pepper, and cubed cheddar cheese.
Make the Dressing
  1. In a small bowl, whisk together the mayonnaise, plain yogurt, Dijon mustard, honey, salt, and black pepper until smooth and well combined.
Assemble the Salad
  1. Pour the prepared dressing over the pasta and vegetable mixture, then toss gently to ensure all ingredients are evenly coated.
  2. Divide the pasta salad into individual lunch containers for convenient and ready-to-eat meals.

Notes

You can customize this salad with your kids' favorite vegetables and cheese. Cooked chicken or ham can also be added for extra protein. This salad is best served chilled.
