  • 8 ounces cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Cake Preparation
  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. In a medium bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. In a separate large bowl, whisk eggs, buttermilk, vegetable oil, red food coloring, vinegar, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Cool cakes in pans for 10 minutes, then invert onto a wire rack to cool completely.
Cream Cheese Frosting Preparation
  1. In a large bowl, beat softened cream cheese and butter until smooth and creamy.
  2. Gradually add powdered sugar, mixing on low speed until combined, then increase speed and beat until light and fluffy.
  3. Stir in vanilla extract.
Assembly
  1. Once the cakes are completely cooled, level the tops with a serrated knife if necessary.
  2. Place one cake layer on a serving plate and spread a generous amount of cream cheese frosting over the top.
  3. Place the second cake layer on top and cover the entire cake with the remaining frosting.
