Preparation
- Prepare the marinade by whisking together olive oil, lime juice, and all spices; then combine with sliced meat in a bowl and let it marinate for at least 15-20 minutes.
Cooking
- Heat a large skillet or cast-iron pan over medium-high heat with a little oil, and once hot, add the marinated meat in a single layer to sear for 3-5 minutes per side until cooked through.
- Remove the cooked meat from the skillet and set aside; then add the sliced bell peppers and onion to the same pan, cooking for 5-7 minutes until they are tender-crisp.
- Return the cooked meat to the skillet with the vegetables and toss everything together to combine and heat through for a minute or two.
Serving
- Warm the tortillas according to package directions, then serve the fajita mixture immediately with the warm tortillas and your favorite toppings.
Notes
For extra flavor, marinate the chicken or beef for at least 30 minutes, or even overnight.
